Today I went to Walmart to buy some XL shorts. A very different size from last summer. Driving there I started thinking some pretty negative things about my body.... Thoughts that I know a lot of you struggle with too. So I'm here to remind you -⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 of my favorite things! 
Zucchini 🥒 Enchilada 🇲🇽 Ingredients:
1 T extra-virgin olive oil
1 c leeks chopped
¼ t kosher salt
1 clove garlic, minced
1 t ground cumin
1 t chili powder
18 oz Shredded chicken breast
1 c. red enchilada sauce
2 1/2 lbs zucchini, halved lengthwise
1 c. Shredded low fat Monterey Jack
1 c. shredded low fat Cheddar
2 Tbs Sour cream, for drizzling
Fresh Cilantro for garnish

Directions:
Preheat oven to 350º. In large skillet over medium heat, heat oil. Add leeks and season with salt. Cook until soft, 5 minutes, then add garlic, cumin, and chili powder and stir until combined. Add shredded chicken and 2/3 cup enchilada sauce and stir until saucy.
On a cutting board, use a Y-shaped vegetable peeler to make thin slices of zucchini. Lay out three, slightly overlapping, and place a spoonful of chicken mixture on top. Roll up and transfer to a baking dish. Repeat with remaining zucchini and chicken mixture.
Spoon remaining 1/3 cup enchilada sauce over zucchini enchiladas and sprinkle with cheddar and Monterey Jack
Bake until melty, 20 minutes.
Garnish with sour cream and cilantro and serve.

Servings: 5, each with 1 Learner Protein, 3 Vegetables, 3 Condiments, and 1 Fat
e on salad. Drizzle with the reserved UNTOUCHED dressing, and serve!

You’d never tell by the sweet second picture but Elijah has this new way of communicating for when he doesn’t want to wait for mommy in his chair or on the floor anymore. A continuous whining that we all just really appreciate. 😅 but regardless the only cure is for me to hold him while I try to get dressed or do dishes or eat.. or go for some type of outing. 
This morning was a bit tough for a few reasons. I didn’t sleep that well due to a bit of congestion, and our least favorite aunty came for a visit in the middle of the night so that’s fun. (If you know, you know) 
Elijah began his normal routine of whining while in his highchair that told me he was done eating when I hadn’t even started eating myself. So since I had zero patience to hear it I immediately packed up my chosen dairy, (fat free yogurt) grain,(gluten free no sugar added granola) and fruit (banana) and Of course water, and we headed out the door for a neighborhood walk. 
I’m choosing to believe Elijah knew we both needed it. It was an absolutely beautiful morning, and I felt both our attitudes change almost instantly. 
Wellness is sometimes the healthy breakfast, and sometimes it’s getting outside with your sweet babe.

Makes 3 servings and per serving you receive: · 1 leaner protein
·  1/3 green
·  1 healthy fat
·  3 condiments
Ingredients:
10oz cooked boneless skinless chicken breasts, sliced thin
3 teaspoons olive oil
6 slices of Canadian bacon, cooked and chopped
4 slices of sliced low-fat Mozzarella cheese
1 cup unsweetened vanilla almond milk
1/2 teaspoon of black pepper
1/4 teaspoon salt to taste
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon fresh parsley
5 tablespoons freshly grated reduced-fat parmesan cheese
1 cup fresh spinach, chopped
1 slice sun dried tomatoes

Instructions

In a large skillet, cook your Canadian bacon, remove from pan, drain fat.
Chop the bacon and set aside.
In that same large skillet add the olive oil.
Place your thin sliced pieces of chicken in the skillet and cook on a medium to high heat for roughly 4 minutes on each side OR until browned lightly on each side and cooked all the way through (NO PINK)
Remove fully cooked chicken from your skillet, and set aside.
In the same skillet, add in the unsweetened vanilla almond milk, chicken broth, garlic powder, parsley, salt, pepper and parmesan cheese.
Whisk over medium/high heat until it begins to thicken.
Add in your spinach and sun-dried tomatoes and allow it to simmer until the spinach starts to wilt.
Turn the heat on low
Next add in the chicken one at a time into the pan, lightly coat with the sauce and place the sliced mozzarella cheese over each chicken piece and sprinkled the cooked bacon.
Cover for about one minute until the cheese completely melts •

Our Operation Summer Freedom Challenge started 9️⃣ days ago and I weighed in today and am down SIX pounds in those 9 days 🎉🎉🎉. And not just that but I feel so great, have more energy, ran 4 miles without stopping and even pushing Rosalie up the hills, and had so much fun shopping in JCrew for the first time and getting size 6 shorts 🙌🏼. It is amazing what happens when you decide to commit 💯 towards your goals, focus on conquering one day at a time, follow a science based proven nutrition plan that focuses on healthy habits, and have an amazing community for support 🙌🏼. Oh and Rosalie wanted to be in the pic ♥️

Can you tell I’m obsessed with shrimp? 🍤 😂

Zoodles & Grilled Shrimp w/ Lemon Basil Dressing 🍤🍅🍋🌱
Lemon Basil Dressing:
1 c basil
16 almonds
1 garlic clove
1 shallot
1/4 t red pepper flakes
2 t olive oil
1 T red wine vinegar 
1 T lemon zest

Zucchini Noodles and Grilled Shrimp:
1 lb shrimp
2 ½ c zucchini
1/8 t Kosher salt and 1/4 t freshly cracked black pepper
1/2 c halved cherry tomatoes 🍅

INSTRUCTIONS:
1. In a high powdered blender combine basil, 1/4 cup sliced almonds, garlic, shallot, red pepper flakes, 1/2 cup olive oil, red wine vinegar and lemon zest. Pulse on medium until evenly combined and smooth. Season with salt and pepper as needed and set aside.
2. Place the remaining almonds in a small skillet over medium high heat to toast. Shake pan every few seconds, until the almonds turn just golden brown. Remove almonds from heat and set aside.
3. Heat one tablespoon of olive oil over medium high heat. Add shrimp and season with salt and pepper. Cook shrimp for 6 – 8 minutes until fully cooked and pink, and add two heaping spoonfuls of the lemon basil dressing into shrimp and toss to combine. Transfer seasoned shrimp to a clean bowl and set aside.
4. Using a mandolin or vegetable spiralizer, cut zucchini into thin spaghetti shaped noodles. Add zucchini noodles to the same pan used for the shrimp and sauté for 1 – 2 minutes over medium heat until just tender. Season the zucchini noodles with salt and pepper and then toss with an additional two heaping spoonfuls of the lemon basil dressing. Turn heat off. Reserve any extra lemon basil dressing for another use.
5. Toss seasoned shrimp with the zucchini noodles and cherry tomatoes. Taste and adjust seasoning as needed. Top with the toasted sliced almonds. Serve immediately.

Two Servings. 
1 leanest protein. 3 greens. 2 fats.3 condiments.

I remember being that girl on the left but I didn’t see myself as unhealthy. I ate well, thought I was doing pretty good but looking back, I was only being good when I didn’t have a reason to be bad. You know, M-F! Haha⠀

When the weekend came it was whatever came my way. Everything was a special occasion. The thing was I didn’t put this weight on in one sitting. It was a 1/2lb here, a pound there until I saw this image and was about to go up a size in my uniform shorts. That’s what finally caught my attention!⠀

My coach had been talking to me for months. I would tell him I was fine and I was doing my own thing. The thing I was doing was trying to eat better, trying to portion control, trying to exercise, trying to make it through the weekend staying on my diet. But then there was a party, a weekend, a glass of wine or bottle haha, a beer, a margarita. Winding down from the weekend meant distressing with a beer, margarita and chips and salsa. No wonder I found more weight then I lost. I needed to work on the healthy mind to learn how to destress without the extra calories. I needed to learn how to reset my mindset to help me get through the weekends and parties without continually breaking promises to myself. I need a coach and I need a program that offered more then just food. I needed help!⠀

I found it! My coach was ready to help me! He had done this too! He understood that there was more to health and weight loss than the food we eat and the pounds we lost. He helped me develop habits. He helped me develop community. He helped me to develop structure and consistency. He helped me to notice my thoughts and showed me tools to help me change them. To help my mindset go from self sabotage to discipline, teacher and student. Then he showed me how to teach others.⠀

I may have gone up 2 lbs since I last weighed and those 2 lbs may have started to get to me, mentally...BUT I am NOWHERE near what I used to be! And I had to remind myself of that last night. Thankfully I know how to get back up and get right back on track! Before I committed to this program, I thought, “...but I don’t want to be dieting my whole life.”😒 What I had to finally realize is; any program, any fad way of eating can be a “diet” if we make it that way. It’s about changing your LIFESTYLE. I had the realization that even successful fitness models or anybody who you look up to on social media because of their weight-loss success story, they got that way and STAY that way because they changed how they lived their lives. They’ve committed themselves to that lifestyle! My mindset was always, “I want to lose this much weight and get down to here by dieting and exercising. And then bring on all the foods and everything I deprived myself of for 6 weeks!”
And it just doesn’t work that way. I’m learning that I have to keep myself in check all the time. I’m at the point in my journey where I can have a piece of cake here or a piece of pizza there, but I have to make sure I don’t let it get out of hand and go right back to fueling my body correctly!✨ And yeah...sometimes it’s not easy. But it’s worth it!!🙌🏾

One of my clients RAVED about this dish on our check in this evening so I HAD to share it before I head off to bed 😴. It’s super EASY too!🙌 Hamburger Cabbage Stir Fry
12.5 oz 93% lean ground beef, should yield (2) 5 oz cooked portions (2 Leans)
1/2 tsp garlic powder (1 Condiment)
2 1/2 cups cabbage, shredded (5 Greens)
1/2 cup green peppers, chopped (1 Green)
2 tbsp lite soy sauce (3 Condiments)
1/2 tsp ground ginger (1 Condiment)
1/2 packet Stevia (1/2 Condiment)
salt and pepper, to taste
(adjust your seasonings accordingly if you are on the 5 &1 plan)
Directions:
In a very large skillet or wok, brown the ground beef with the garlic powder and a little salt and pepper. Add the cabbage and stir-fry until the cabbage is tender-crisp. Add the remaining ingredients and heat throughly. Adjust the seasoning to your taste.

Tired of feeling like crap.

This year I’m in such a better place. 
Down at least 35lbs, with a much healthier mindset. 
Yes, I’m going to eat treats. 
BUT I’m also going to eat so much salad, fruit and veggies. 
BALANCE is the name of the game this year.

Thankful for my life- all of it. Even the most traumatic parts I’ve had to forgive. Alllllll Glory to God. He has shaped me into who I am now and entrusted in us things we never imagined. Taking those steps while HE directs them always~and trying to always be present & content in TODAY but also allowing myself to dream in ways I never thought I could. Using the skill & never ending thought processes and flowing of ideas God designed in me 😂🙌🏼

Full transparency.... from breaking the seams of my skinny jeans .... to taking action! .

So many of us struggle! People change, lives change, desires change. Life is a constant door of curve balls! .
.
I personally struggled with finding my time for myself. I was an avid gym goer, it was my stress reliever and my feel good! .
.
.
On top of my normal life add in running a business and a full time job! I no longer had “time” for the gym or myself!! Lol, That’s what I told myself..... in reality I was lazy! So instead to occupy my stress & time, I resorted to eating and drinking!! .
.
.
You don’t realize it at 1st, the onset of the change.  But months of continuous cocktails, pizza, beer, junk food well it adds up!!! Before I knew it I was busting through the seams of my skinny jeans. .
.
.
I no longer felt like myself more like an imposter.  Until one day I picked my ass up out off the pity me party and started to do something about it! .
.
.
I started with This program that really helped me get rid of all my cravings and help me detox!  I literally had a migraine for 4 days after I started!  That was in the beginning of March! .
.
.
Come May I was feeling great... lost some weight and hit a plateau.. It was time to get my ass back to the gym! .
.
.
Fast forward to present day and I have lost countless pounds & inches and most of all HAPPY!!! .
.
.
It’s never to late to start! It’s never to late to put yourself 1st!  In fact it should be a priority!! .

This has been one of the most helpful pieces of advice I received from a friend! I used to really only eat vegetables at dinner. And even then it was just one serving. 🤦🏼‍♀️

Now I probably eat 4-6 servings of veggies everyday!! I try to focus on eating vegetables with almost every single meal or snack. 💚 Now, I CRAVE veggies! They are such a great source of fiber (fills you up!) and vitamins & minerals! 👌🏼

This has been one of my favorite summer snacks: one mini cucumber chopped, 1/2 halved grape tomatoes and a splash of red wine vinegar. Delicious! ❤️

4 months 27lbs and 18 inches gone forever! This program has really opened my eyes to how much the food you put into your body impacts every part of it. I have not exercised once during those 4 months! My initial goal was to lose the excess weight that I was carrying and then to begin an exercise program to build muscle and strength. I have 3 more pounds to go to hit my goal weight so I'm currently researching local fitness programs and learning how to transition out of the @optavia 5 & 1 program into the next phase. 🙌  Let's do this!

The woman on the left has struggled with being overweight most of her life. I was happy to a point. Most of the time, I didn't let my weight hold me back. There were occasions when it prevented me from enjoying parts of life. I found love after divorce & became engaged. I decided that my future husband deserved a life where he didn't have to take care of me. Being an RN for 22+ yrs, I knew the devastation that her diabetes & high blood pressure could cause. I decided I had to change.
The woman on the right is 115 lbs lighter, happier, & enjoying life. I can work all day & not get winded or extremely tired. I can walk and run up hills. I can fit into smaller clothes & even fit into roller coasters! My mind is clear & able to make sound decisions. I am living life! I still have quite a ways to go, but I do not regret starting the journey. I only wish I had found it sooner!”

Meet Christen (@irreverenthealth) “Here is tale of two girls named Christen. 💁🏻‍♀️🙎🏻‍♀️ The girl on the left was 32, 266lbs with a lot of life and love to give. ☹️She was also self conscious, tired, depressed, frustrated, and hiding. She smiled on the outside because she didn’t want others to see the shame or lack of control she felt. 🤩The girl on the right is 42 this year. She’s down 100lbs from that 32 year old self.  She’s still working on re-wiring those old messages of shame, but she’s LIVINGGGGG LIFE for the first time! 🏋🏻‍♀️🤸🏼‍♂️🧘🏻‍♀️🤸🏻‍♀️She’s moving,✈️ traveling, risking, challenging,🙏🏻 praying her guts out for God to make Himself known to her.  She’s MESSY! But what changed is she’s now got TOOLS🔨, NUTRITIONAL STRUCTURE, and a COMMUNITY 👩‍👩‍👧‍👧to help keep moving her toward the BEST version of herself for the sake of others. -so spoiler alert. Both those gals are me. And all the above is true. But it’s important that you know I still have dark moments where i wonder if I’ve hit my wall. Like if this is all the change I’m allowed in this lifetime.  Like, I’ve tried 1000 times to move THIS needle or THAT needle (singleness, wealth that allows me to be super generous, and abs...not kidding)  being three prominent needles... and i think...i can’t try again. This must not be for me....i should just ‘accept’ this is where I’m going to be.  But every time I think that, God has graciously meets me with His word, he reminds me of the gift of ever moving sanctification...or brings me a kind friend or a sermon who speaks truth over me, or  or clients out of no where, or new opportunities to create, explore and try.  Not because I’m any less to Him if I don’t. But because He loves me and He’s promised me NEW and REAL LIFE as i Do. 
This adventure I started, did not end with losing weight. That’s were things got interesting! 
You may think your goal is to lose weight this holiday season. And MAZELS if it is.  But my friend, my guess is that your REAL desire beneath that desire will come to the surface as you start to see change happen in your body and start to reconnect with the purpose and life God had in mind when He thought you up❤
